You’ll notice: one part of the griddle runs cold or much hotter than the rest.
What it means: on electric griddles a failed thermostat or heating element for that zone; on gas, a clogged burner or orifice or a pilot out for that section. Even heat needs each zone’s control working.

Griddle / grill — won’t heat at all
You’ll notice: a unit or section won’t come up to temperature.
What it means: electric: a burned element, failed thermostat, or contactor; gas: a pilot/thermocouple problem, gas valve, or igniter. We test the heat circuit to find which.

Roller grill — rollers won’t turn or won’t heat
You’ll notice: the rollers stop turning or one zone won’t get hot.
What it means: a failed drive motor or gear, a broken roller, or a heat element/thermostat fault. Roller grills run all day, so motors and elements are the usual wear items.
