FLAME

Range — burner won’t light or pilot won’t hold

You’ll notice: a burner clicks or won’t light, or the pilot keeps going out.

What it means: on Vulcan gas equipment this is usually a dirty or misaligned pilot, a weak thermocouple (so the safety valve won’t stay open), a clogged burner or orifice, or a failing spark module on electronic-ignition models.

HEAT

Fryer — won’t heat or won’t hold temperature

You’ll notice: the fryer won’t come up to temp, overshoots, or trips its high-limit.

What it means: common on commercial fryers: a tripped or failed high-limit, a drifting thermostat, a weak gas valve or igniter, or (on electric) a burned element. A fryer that won’t hold temp is also a food-safety and oil-life problem.

OVEN

Convection oven — won’t heat or heats unevenly

You’ll notice: the oven stays cold, takes too long, or cooks unevenly.

What it means: usually a failed igniter that no longer opens the safety gas valve, a bad temperature sensor or thermostat, or a convection fan motor not circulating heat. Uneven results often trace to the fan or a door not sealing.
